Molasses Cookies

I bought a jar of molasses thinking I would make gingerbread men for the grands.  When I got home from that shopping trip I discovered that I already had about half a jar of molasses. I ended up making sugar cookies instead of gingerbread men and have one and half jars of molasses to use up. 

 Hmmmm... what to do with all that molasses?   I thought, "Molasses cookies!"  I took my favorite cookbook off the shelf and went to the cookie section in search of a recipe.  This cookbook was a wedding gift 42 years ago... as you can see, it's had a lot of use!


I've got to figure out a way to reattach the cover...

I found a recipe though!  Years ago I went through the book and marked my favorite recipes with red marker and commented on how good the recipe was... this one was
excellent"!

Shortening, brown sugar, eggs and molasses...

This dough is so thick... I don't know how I managed to get it all mixed together before I had a mixer.  Must have had much better arm strength than I have now!  

The cookies are delicious and the recipe makes four dozen.  My hubby loves molasses cookies and I haven't made them in a very long time.  

Making these cookies is not, however, going deplete my molasses supply anytime soon... it only uses a quarter of a cup of molasses.  Guess I'll have to find something else to make... anybody have any good molasses recipes that you would like to share?
